Ingredients
4 large pork chops
6 sticks rhubarb
1 glass Marsala
3 tbs dark soy sauce
1 orange, zest and juice
1/2 tsp ground ginger
1 tsp ground coriander
1/2 tsp cinnamon
honey to taste (I used 3 tbs)
25 g butter
Method
- Wash the rhubarb and cut into 2 cm pieces. Place in a pan (stainless steel or enamel) with the juice of the orange. Cover and cook until the rhubarb starts to collapse.
- Add the spices, orange zest,soy sauce and a tablespoon of honey. Remove the lid from the pan and cook on a moderate heat for 5 minutes.
- Melt the butter in a heavy based saucepan. Sear the pork chops.
- Cover the pork chops with the sauce and cook in the oven at 200 C fan until the chops are cooked through and there is no pink meat. This should take 15 to 20 minutes depending on the size of the chops.
- Serve the pork with mashed potato and vegetables of your choice.
