salmon and pepper skewers

These are really easy and a great recipe to get your children involved in helping.  They look really colourful and are a good thing to make if your children are reluctant to eat fish as things on a stick seem to be almost universally more popular!  I served mine with a very simple boiled couscous and a quick tomato salsa but they go equally well with a simple salad or rice.

Ingredients

300g salmon chopped into inch cubes

1 red pepper cut into inch squares

1 orange pepper cut into inch squares

1tbs olive oil for brushing

salt and pepper for seasoning

4 skewers

Method

  1. If you are using wooden skewers soak for 30 minutes in cold water before you start.
  2. Thread the skewers with a red pepper, salmon and orange pepper alternately until all gone.
  3. Brush the completed skewers with oil and season with salt and pepper.
  4. Heat the grill to high and grill for 12 to 15 minutes turning regularly until the salmon is cooked through.
  5. Serve with the sides of your choice.
