Stir fry’s are a great idea for families. They are quick, nutritious and can be adapted to cater for personal preferences easily. I think that the mushrooms and broccoli work together really well in this recipe not just as a colour combination but also that the flavours marry well together. Let me know what you think!
Ingredients
300 g chestnut mushrooms thinly sliced
3 tbs vegetable or groundnut oil
3 cloves garlic finely chopped
300 g broccoli cut into small florets
200 g mini corn halved length ways
1 tbs light soy sauce
2 tbs oyster sauce
1 tbs rice wine (I used Mirin)
Noodles
Method
- Heat the wok until it is really hot. Add in the oil and swish carefully to coat with the oil.
- Add the garlic moving it around. After a minute add the broccoli, keep stirring for 2 minutes before adding the mushrooms and corn cook stirring constantly for another couple of minutes. You might need to add more oil at this point.
- Cook the noodles according to the packet instructions.
- Add the soy sauce, oyster sauce and rice wine. Cook for a minute.
- Add the noodles and stir to combine.
- Split the noodles between 4 dishes and serve.
