Noodles with mushrooms and broccoli

mushroom and broccoli noodlesStir fry’s are a great idea for families.  They are quick, nutritious and can be adapted to cater for personal preferences easily.  I think that the mushrooms and broccoli work together really well in this recipe not just as a colour combination but also that the flavours marry well together.  Let me know what you think!

Ingredients

300 g chestnut mushrooms thinly sliced

3 tbs vegetable or groundnut oil

3 cloves garlic finely chopped

300 g broccoli cut into small florets

200 g mini corn halved length ways

1 tbs light soy sauce

2 tbs oyster sauce

1 tbs rice wine (I used Mirin)

Noodles

Method

  1. Heat the wok until it is really hot.  Add in the oil and swish carefully to coat with the oil.
  2. Add the garlic moving it around.  After a minute add the broccoli, keep stirring for 2 minutes before adding the mushrooms and corn cook stirring constantly for another couple of minutes.  You might need to add more oil at this point.
  3. Cook the noodles according to the packet instructions.
  4. Add the soy sauce, oyster sauce and rice wine. Cook for a minute.
  5. Add the noodles and stir to combine.
  6. Split the noodles between 4 dishes and serve.
