Smoked salmon carbonara

smoked salmon carbonara

This is basically a recipe for carbonara that uses smoked salmon instead of bacon.  So it is really very straightforward.  I tend to not mix the smoked salmon into the pasta and its sauce as I prefer it not to be cooked from the heat of the pasta, however it is absolutely fine to mix it into the pasta if that is how you prefer it. This serves 4.

Ingredients

4 eggs –  yolks only

100 g parmesan finely grated

A few twists of freshly ground black pepper

500 g pasta

100 g smoked salmon chopped into small pieces

Method

  1. Separate the egg yolks in a bowl. Add 3/4 of the parmesan and the pepper.  Mix to combine.
  2. Cook the pasta according to the packet instructions.
  3. Return the drained pasta to the saucepan and add the egg and cheese mixture.  Mix to combine.  The heat of the pasta will cook the egg.
  4. Divide between 4 plates.  Top with the salmon and sprinkle with the remaining parmesan.  Serve with a green salad.
