Moroccan bean burger

This is a really filling burger which is pretty quick to put together and was enjoyed by everyone.  Chermoula is an ingredient that you might not have come across, it’s a spice mix of preserved lemons, onions, capers, coriander, parsley, cumin, peppers and chilli’s.  You can readily buy it in supermarkets.

Ingredients

1 onion grated or chopped very finely

1 Sweet potato grated

1 tbs vegetable oil

2 tbs Harrisa

1 400g Kidney beans drained

4 tbs coriander chopped finely

1 tbs Chermoula

1 Egg

Method

  1. Heat the oil in a frying pan and fry until translucent.  Add the sweet potato and cook until the sweet potato has started to soften.
  2. Put the kidney beans in a bowl and mash lightly with a fork.
  3. Add the rest of the ingredients and mix to combine.
  4. Split the mixture into 4.  Take a 8cm cutter and place on an oiled baking tray.  Spoon a quarter of the mixture in and then press down to form a burger.  Repeat until all the mixture is used.
  5. Place the burgers under a medium grill and cook for 5 minutes on each side until golden and cooked through.
  6. Serve in a bun with some hummus and a salad on the side.
