Cheese and herb scones

Scones are a great thing to make with children as they don’t have many ingredients, are comparatively quick  and simple to make, so they can do a large part of it independently.  The biggest disadvantage is really that they contain flour and you would be amazed at how far it can travel in the hands of one small child.  At one point when she got a little over enthusiastic at rubbing in the butter I had to wipe it out of her eyes!  Still it didn’t put her off !  The only part that she didn’t do was the grating of the cheese as I felt that that was probably a step too far at 3.  This recipe makes 12 and freezes well.

Ingredients

450g self raising flour

1 tsp salt

75 g butter chopped

60g mature cheddar grated

handful of chives snipped

300 ml milk

50 g parmesan grated finely

Method

  1. Heat the oven to 220C.  Place the baking sheets in the oven to heat up.  This will make your scones rise better.
  2. Sift the flour and salt into a large mixing bowl.
  3. Tip the butter into the mixing bowl and rub the butter into the flour.    Stop when all the butter is rubbed in and it looks like breadcrumbs.
  4. Add the cheese and chives and  mix briefly to combine.  Stirring is very popular.
  5. Add the milk and mix until it forms a rough ball.  This took quite along time as it was difficult for my daughter to get to the flour at the bottom of the bowl.
  6. Tip onto a floured surface and use your hands to bring together.  This was popular as it was messy!
  7. Roll out until about 3 cm thick and cut out using a 7cm cutter.
  8. Brush with milk and sprinkle with parmesan.  She enjoyed painting the scones!
  9. Remove the hot trays from the oven and carefully place the scones on the tray.  I did this.  Then cook until golden on top.  This should take 8 to 10 minutes.
  10. Remove from the oven and eat once cooled a bit.
