This is a very simple curry, it is an ideal curry to introduce to children as it is not hot and has a lovely sweet flavour from the mango. Feel free to miss out the broccoli and mini corn I tend to add to up the veg content for the children! This recipe serves 4.
Ingredients
500 g firm white fish chopped into bite sized pieces
1 tbs vegetable oil
1 large onion finely chopped
2 cloves of garlic finely chopped
2 tbs curry powder
1 red pepper thinly sliced
200g broccoli and mini corn
400 ml coconut milk
150 g dried mango
2 tbs chopped Coriander
Method
- Add the oil to a pan. Add the onion and fry until translucent.
- Add the garlic and fry for a further minute.
- Add the curry powder and stir to combine.
- Pour in the coconut milk. Add the peppers, broccoli and mini corn and bring to a slow simmer.
- Add the fish. Cook for 6 minutes until almost cooked through.
- Add the mango and cook until the fish is cooked. This should take a couple of minutes.
- Serve with Naan bread or steamed rice sprinkled with the coriander.
