Feta is such a great cheese. I love it’s salty taste and its crumbliness. I use it in a few pasta dishes but I enjoy it most in Greek salad perhaps because it reminds me of lovely summer holidays in Cyprus.
Ingredients
1 red onion sliced as finely as you can
1 tsp dried oregano
2 tbs white wine vinegar
6 tbs extra virgin olive oil
4 large ripe tomatoes chopped into bite sized pieces
1 cucumber, sliced in half lenthways, seeds removed and chopped into chunks
25 black olives pitted
200g feta cheese, crumbled
Method
- Place the onion, oregano, olive oil and vinegar in a bowl and stand for a couple of hours.
- Put the tomatoes, cucumber, and olives in the bowl and mix to combine.
- Add the feta and stir carefully keeping the feta intact.
- Split between 4 bowls and serve.
