Greek salad

Feta is such a great cheese.  I love it’s salty taste and its crumbliness.  I use it in a few pasta dishes but I enjoy it most in Greek salad perhaps because it reminds me of lovely summer holidays in Cyprus.

Ingredients

1 red onion sliced as finely as you can

1 tsp dried oregano

2 tbs white wine vinegar

6 tbs extra virgin olive oil

4 large ripe tomatoes chopped into bite sized pieces

1 cucumber, sliced in half lenthways, seeds removed and chopped into chunks

25 black olives pitted

200g feta cheese, crumbled

Method

  1. Place the onion, oregano, olive oil and vinegar in a bowl and stand for a couple of hours.
  2. Put the tomatoes, cucumber, and olives in the bowl and mix to combine.
  3. Add the feta and stir carefully keeping the feta intact.
  4. Split between 4 bowls and serve.
