Indonesian style fried rice

nasai-goreng.jpegThis is an Indonesian dish which I first had when I lived in Japan so the version I had may well not have been that authentic.  I have then tried to recreate this from memory so this is my version and so please forgive me if you don’t think it is authentic.

Ingredients

1 tbs ground nut oil

350g basmati rice

3 cloves garlic, crushed

5 cm ginger, grated

1 green chilli, diced as small as possible

3 tbs tamarind paste

175 g green beans chopped into bite sized pieces

175 g mini corn chopped length ways

3 tbs Kicap manis

2 tbs vegetable oil

4 eggs

Crispy onions ( you can buy these)

Lime wedges

Method

  1. Cook the rice as you normally would.  If boiled make sure the rice is thoroughly drained.
  2. Heat the oil in a wok until hot.  Add the garlic, ginger and chilli and fry for a minute until aromatic.
  3. Add the beans and mini corn and stir fry for a couple of minutes.
  4. Add the rice, tamarind and kicap manis and stir until the rice is coated and heated through.
  5. Add the vegetable oil to a frying pan.  Crack the eggs and fry.
  6. Split the rice between four bowls.  Top with a egg, crispy onions and a lime wedge.  Serve.
